For two servings, you will need:
- 3 bell peppers (two to stuff, and one diced to put in the stuffing)
- 1/2 pound of ground turkey
- 4 slices provolone cheese
- 2-3 ounces orzo
- Italian seasoning (pre-made or your own blend)
Take the tops and seeds out of the remaining two peppers and place a slice of provolone inside.
Fill the peppers with the stuffing mixture, adding another dash of Italian seasoning to the top.
Lay another slice of provolone on top of each pepper, then bake at 350 degrees for 20-25 minutes until the cheese is bubbly and beginning to brown.
